Why is there no Mac ports ?  e.g  use Wine to install old Mac apps?

I know it probably wouldn't make much sense, but the only options on the Mac is to use Bootcamp, or Virtual machine/VirtualBox at the  very least.

You can reverse engineer Apple's code as much as u could reverse engineer Microsoft Windows I would have guessed. Or is that there is not that much interest in running older Mac apps ?

Wineskin Winery is a project for mac  based on WINE to have a GUI for it on macOS and to create a wrapper for the single Windows ported application/game:

wine is a project to run Windows applications firstly on Linux and then on Mac Os x and other systems...

So if you need an emulator for old  not intel mac applications you need something different
