How do you intend to install it? With steam or a retail disk version?

Steam version.

If you want to play it with macOS High Sierra you need the steam wineskin wrapper by dankoB:

Once you installed the game inside it, if it doesn't work, you should try this fix for High Sierra:

NOTE: you have a very old hardware not adapted for gaming...So the best way to hope to play some games is a Windows bootcamp  partition and play them natively on Windows, because playing them on macOS through Wine or through a Wineskin wrapper, requires more resources respect than playing natively on Windows, so performances could be very bad

I'm trying to natively install Windows 7 using bootcamp and a Win7 install disc. I'll let you know how it goes as I'd prefer this to messing around with programs.

I told you your hardware isn't good for gaming...

you could try to limit skyrim's framerate at costants 30fps with a framerate limiter

Otherwise:

there is a new beta service by nVidia that permits to play games on very high hardware by a streaming service directly  from your mac or pc:

https://www.nvidia.c...rce-now/mac-pc/

The Elder Scrolls V: Skyrim is into the list of games supported by service, so if you have a good connection ( minimum 25Mbps and 50Mbps as recommended ) you could try it
