UPDATE: Problem fixed.
I copied across the entire Wineskin-created CoolEditPro.app from the old Snow Leopard system drive to the equivalent location on my El Capitan system drive.
Did "Show package contents" on it and ran the Wineskin app.
Selected "Advanced" and went to the Tools tab.
Selected "Update Wrapper" and did a test run
Result: Cool Edit Pro launched successfully and (as far as I can see) running normally. Job done.
Thanks to anyone who took the trouble to read this thread.
